[edit] MMS usage of signalling channel - correction

MMS does not use the signalling channel. It uses GPRS (the same as any other internet connections), but usually is assigned to another Access Point (AP). This AP is usually directed to the operators MMSC (MMS Centre), and that will handle the transfer, which can be both to a mobile number or to an email address.

If you want to confirm this, You can check in your non-iPhone handset. On a Nokia S60 handset, go into 'Messaging', select Options | Settings | Multimedia message, and you'll see an 'Access point in use' option.
